mendeley: fix gconf errors, minor cleanup #33436

Motivation for this change

Currently running mendeley (in my non-gnome environment, anyway) yields this:

Error setting value: Failed to contact configuration server; the most common cause is a missing or misconfigured D-Bus session bus daemon. See http://projects.gnome.org/gconf/ for information. (Details -  1: GetIOR failed: GDBus.Error:org.freedesktop.DBus.Error.ServiceUnknown: The name org.gnome.GConf was not provided by any .service files)

This can be fixed by propagating gconf into the user environment (apparently).

  • Tested using sandboxing (nix.useSandbox on NixOS, or option build-use-sandbox in nix.conf on non-NixOS)
  • Built on platform(s)
    • NixOS
    • macOS
    • other Linux distributions
  • Tested via one or more NixOS test(s) if existing and applicable for the change (look inside nixos/tests)
  • Tested compilation of all pkgs that depend on this change using nix-shell -p nox --run "nox-review wip"
  • Tested execution of all binary files (usually in ./result/bin/)
  • Fits CONTRIBUTING.md.

Replaces #33396 but without the sandbox disable parts that are better addressed with #33434 .
