There is a way to mess with the options of a number of package to avoid setting dates in the PDF metadata, but it turns out the files change because of randomly generated subsetted font names, see, e.g., https://tex.stackexchange.com/questions/292675/why-does-xelatex-produce-different-files-from-the-same-deterministic-sources.
SOURCE_DATE_EPOCHfixes everything.
